fast sunday
Yesterday was fast Sunday. It was hard, because if McKay was home, he would be sitting with us, and have his arm around his mommy. Anyway it was a good meeting. During Relief Society, after a couple of sisters bore their testimonies,. I stood up, everyone looked at me expectantly. I said, "sorry I have to go pee really bad." and ran out. I was holding a baby during sacrament meeting and put her to sleep. I did not want to wake her up. My bladder was so full that I was about to explode and nearly pee in my pant, I barely make it to the toilet without wetting my pant. I am sure you girls out there know exactly what I am talking about.

Do you think too many people,esp. women would want to go to Heaven if there is no peanut butter and chocolate? This is a sinfully good to goodness brownies.
Ingredients
4 cups butter (melt in pan) add
1 cup semi sweet choc chips-melt, than add
6 eggs. slightly beaten, add
1 tabsp. decaf instant coffee
2 cups sugar
1 tbsp. vanilla , mix well
add the dry ingredients of:
1 tsp. salt
1 tsp. baking powder
2 cups flour than stir in
2 cups roughly chopped pecan
Mix all the above well, then add peanut butter ( 1 cup) see photos)
I like to line my pan with tin foil to prevent the edge of the brownie from burning |

Remembering McKay
Memorial day really is for the soliders who died for our country. Many of us use this day to remember our love ones as well. We were very glad and happy to know that our McKay was not forgotten and was remember by those who went to visit his grave and brought flowers as well. Thank you.
June 3rd 2011 would have marked McKay 2 year mission srvice in Bucharest, Romania

Apricot pork chops and polenta
These are some of our favorite combo for a meal, and the Maori boys had polenta for the first time. We like to fry the left over polenta in butter the next day, topped with a fried egg for breakfast. Yum yum yumcious
Apricot Porkchops yum yum yumicious
3 cups chicken broth, bring to boil |
slowly stir in cornmeal till smooth |
Ingredients for creamy polenta
3 cups chicken broth, bring to boil in a large pot.
1 1/2 cups cornmeal. slowly stir into hot broth one cup at a time, when polenta is cook, it will look smooth,
add 1 cup cream to the corn meal. Then stir in
1 cup Parmesan cheese, Serve warm or cold. It is delicious.

Apricot Porkchops yum yum yumicious
Ingredients: Pork chops, I did 8 chops
1 medium red, and 1 med. yellow peppers, chopped
1 med. onion. chopped
2 cloves garlic, minced
2 tablespoon olive oil
1 tsp. coarse black pepper
1 tbsp. chicken bouillion
1/2 cup white wine chardonnay or chicken broth
1/2 cup apricot jam
heat pan. add oil, brown chops |
add chopped peppers, garlic and onion. cook 5 mins |
Add wine & bouillion or broth. On med. heat reduce sauce. about 30 minutes |
add apricot jam, black pepper, mix well |

mothers day
Father and daughter went to town and made a grand brunch for Mothers day. We had waffle and cream as well as toppings of fruits and syrups. For dinner, they had grilled sausages, corns, mushroom, fried green beans, fresh salad with lemon and oil dressing, pasta, Oreo balls and chocolate covered strawberries for dessert. We had our friends, Susan Tidwell and her children joined us for mothers day, since her husband Jeff had to work. Chandler, Salym, and Dex helped made the food. Naivasha also made a chocolate cake for Ashton's birthday. The Moari boys and Ashton had cleaned up duties. It was a nice
and lazy day for the two mom. We also went to visit McKay's grave.

carrots in my purse
I know it has been a while. So I thought I will repent and start again. The problem is, whenever I work on my blog, it takes me forever. My sweet husband would make comment as "you are on that thing again."
Anyway, in order for me to put in my recipes, I have to find my camera. I have no idea where it is. I thought I had it on the kitchen island, behold it is not. Well I thought I would try looking in my various handbags. No, I did not find my camera, however, I did find, a bag of carrots (no it has not turned and they are not moldy)in one purse I found a bag of pretzels in another, some cashews nuts and pretzel in another, chocolate in another, I even found some gums (no not those attach to my teeth from my mouth), those you can chew for bad breath or to look like a cow out in the pasture. I look in my closet, I look in my bathroom, I look in my office, but no, the camera is determined not to be found. Maybe it is in one of the vehicles. I would have to wait for my husband and children to get home, since the vehicles are driven by each of them, while I am imprisoned in my own home, unless I want to use my feet, and I do not want to go anywhere that bad.
I think I will make me some lunch of fat free greek yogurt with a spoonful of honey, loaded with black and blue berries. I think I will add a spoonful of pure marple syrup to make it divine. Yum, yum, yum.
Yesterday, I started on a non fat diet. So I made deep fry egg rolls for the priest quorum and the leaders that came to our house, and we also had cheese burgers, potatoes salad, and a healthy dose of sweet watermelons. The boys and leaders enjoyed it, so did I. Today, I will try again to do better. We will see how successful I am. My problem is, I am a food addict.
It is Ashton's graduation from high school this evening. I need to make some candy lei for him. Cheerio
Oh I forgot, Now that rugby season is over, our Maori boys left lat week. Walter left on Tuesday (after disappearing for three days with no calls, etc) and Brandon left on Thursday.
